Originally "umble pie," this was a medieval dish made from the "umbles" — the heart, liver, and other innards — of a deer. While the lord of the manor ate the prime cuts, servants and lower-ranking people ate the umble pie. By the 19th century, "eating humble pie" came to mean being forced into a humiliating apology.
